Garlic + Thyme Roasted Tomatoes
I've been obsessed lately with roasting things - asparagus, potatoes, salmon, chicken...whatever it is, if I can drizzle it with olive oil, throw on a little seasoning and pop it in the oven, I'm a happy camper.
A bit of heat from the oven can accentuate an ingredient's natural flavors so well that you don't need to do a whole lot to make an amazing dish. These Garlic + Thyme Roasted Tomatoes take only a few minutes to prep, but the flavor you get is incredible. The tomatoes get sweeter as they cook and the garlic and thyme add the perfect savory touch. Spread on a fresh baguette for a perfect snack or appetizer!
Garlic + Thyme Roasted Tomatoes
2 pounds cherry or grape tomatoes
4-5 garlic cloves, peeled and smashed
A few sprigs of fresh thyme
Olive oil
Salt and pepper
Preheat an oven to 425 degrees. Line a baking sheet with parchment paper. Spread tomatoes and smashed garlic cloves in a single layer on the pan.
Remove the leaves from some of the thyme sprigs and sprinkle on the tomatoes and garlic.
Drizzle olive oil over everything and then sprinkle on a bit of salt and pepper. Mix everything together (I just use my hands). Throw a few extra whole thyme sprigs on top.
Bake for about 25-30 minutes, or until tomatoes get slightly browned. Allow to cool for a couple minutes.
Spread on top of toasted baguette slices, spoon over pasta, use in roasted tomato soup or serve any other way you like!
*Don't have cherry tomatoes? Just cut any other variety into bite-sized pieces.
