I always tell myself I’m going to wake up before my kids, but every morning that snooze button proves irresistible. Usually I wake up to the sound of my youngest yelling “Mama!” from his crib. Then my husband and I play a silent game of waiting to see who’s going to get him while the other pretends to sleep. I’ve never admitted to playing this game, but let’s be honest—it happens almost every morning.

Eventually I roll out of bed to retrieve my youngest (at least on the days when I manage to get up first), and then head to the kitchen to get started on breakfast for him and his two siblings.

Just like my kids, I have to eat a good breakfast in the morning. A granola bar just doesn’t cut it for me. I notice hunger strike just an hour or two later or a crash in my energy level if I don’t eat a protein-rich meal. But too often, starting my day with the cries of my kids means my breakfast gets put on the back-burner.

Enter the frittata.

In this season of life, with four-year-old twins and a two-year-old, make-ahead meals or recipes I can eat all week long are key. This dish is perfect for that. I can make this Chorizo Frittata on Monday morning and have enough for a week’s worth of breakfast for my husband and me. Or, I can prep it on a Friday night for a hearty weekend brunch (and plenty of leftovers!).

It’s also a great mix-and-match recipe. Instead of chorizo and queso fresco, saute crumbled Italian sausage and mix in fresh mozzarella. Or in lieu of a meat-heavy dish, load it up with vegetables like mushrooms and tomatoes. While I love the way the recipe is written below, it’s definitely a dish you can adjust according to whatever is left in your fridge.

For this recipe, I used queso fresco, a Mexican cheese typically made from cow’s milk or a mix of cow and goat milk. It’s a fresh, crumbly cheese that has a bit of tang, so it helps balance out the richness of the chorizo. If you like, you could try substituting other cheeses such as cheddar.

After cooking the frittata, I love topping it with fresh cilantro. This bright herb adds a freshness to a hearty egg dish. If you aren’t a cilantro lover, though (my husband says it tastes like soap), you could always substitute fresh parsley instead.

Try serving this dish alongside fresh fruit, tender greens with a splash of oil and vinegar, or breakfast potatoes. It makes a great brunch dish or can be enjoyed on its own.

Or, if you’re like me, just heat up leftovers in the microwave and snag a few bites while you chase down your kiddos.

Frittata with Chorizo + Queso Fresco [Gluten-Free and Keto]
Yields about 8 servings

1 Tablespoon extra virgin olive oil
1 medium yellow onion, diced
1 red bell pepper, diced
12 ounces Mexican-style chorizo (I like to use mild), casings removed
12 large eggs
5 ounces queso fresco, crumbled (plus more for topping)
¼ cup whole milk
1 Tablespoon chopped fresh cilantro (plus more for topping)
½ teaspoon salt
¼ teaspoon freshly ground black pepper
Preheat the oven to 400 degrees.

In a 9- to 10-inch cast-iron or other ovenproof skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper. Sauté for 5-6 minutes or until softened.

Add the chorizo, breaking up the pieces with a wooden spoon. Cook for about 5 more minutes, and then turn off the heat.

While the chorizo cooks, in a large bowl, whisk together the eggs, queso fresco, milk, cilantro, salt, and black pepper.

Pour the egg mixture over the chorizo, and give everything a stir. Transfer to the oven and cook 14-16 minutes, just until the eggs are set. (I like to remove the frittata from the oven just shy of them being fully cooked, because they’ll continue to cook slightly even when they come out of the oven.)

Remove from the oven and let sit for 5 minutes. Slice and top with more crumbled queso fresco and chopped cilantro.

My mom made a broccoli salad like this when I was growing up. I still have her hand-written recipe card and used that as inspiration for this version. For some reason, despite broccoli having a reputation of not being the most kid-friendly food, I LOVED her salad. The combination of crunch and creamy, savory bacon and a bit of sweet…it was so good!

I didn’t realize, though, that probably one of the reasons I loved it so much had to do with the crazy amount of sugar added to it. And it wasn’t just my mom’s recipes. I’ve looked up similar versions online, many of them loaded with granulated sugar.

If you look around my website, it’ll quickly become obvious I’m not anti-sugar. I just want it in the right places—like a good shortbread cookie (basically butter, flour, and sugar) or simple syrup (sugar and water) for cocktails. But whenever I can, I decrease the amount of sugar in recipes or use unrefined sugars like honey, maple syrup, or coconut sugar.

This recipe cuts down on the sweetness and uses honey. The mayo-based dressing gets tossed together with crunchy broccoli, crisp bacon, red onion, raisins, and pine nuts for the perfect combo of flavors. To be honest, I think I love this paleo-fied broccoli salad even more than the one I grew up eating!

(Paleo) Summer Broccoli Salad
Yields about 8 servings

16 ounces broccoli florets* (about 5.5-6 cups)
12 ounces bacon, chopped and cooked until crisp
½ cup chopped red onion
½ cup raisins
½ cup pine nuts or sunflower seeds
¾ cup mayonnaise
2-3 Tablespoons honey (I used 2)
2 Tablespoons apple cider vinegar
Freshly ground black pepper

Add the broccoli, cooked bacon, onion, raisins, and pine nuts to a large bowl.

In a separate bowl, whisk together the mayo, honey, and vinegar. Pour the dressing over the rest of the ingredients and toss well. Season with freshly ground black pepper to taste.

You can serve this salad immediately, but it’s best if you let it sit in the fridge for a couple hours. Just give it a good stir when you’re ready to serve, as the dressing can gather at the bottom.

So what’s the point of little things like this? What’s the point of baking cookies or writing on a food blog or sharing ordinary pieces of our lives on the Internet? I’ve wrestled with this often over the years, and I don’t think there’s a simple answer. Sometimes, for me, I do have to set my creative work aside to deal with deeper heartache in front of me. But other times mixing dough and taking photos, moving our hands and tasting what’s sweet...sometimes that’s exactly what we need when the world feels dark.

A few years ago as I wrestled with the purpose of my own work, I came across Francis Schaeffer’s book, Art and the Bible. He asks, “Is the creative part of our life committed to Christ? Christ is the Lord of our whole life and the Christian life should produce not only truth—flaming truth—but also beauty.”

In the midst of grief, heartache, and a dark and despairing world, we have to be people who speak truth—but we also have to proclaim beauty. It’s not about conforming to the world’s standards of beauty but about reflecting the beauty of our Creator God through what we create.

No, it’s not always the time to bake cookies. It’s not always the time to take photographs or play around in the kitchen. But sometimes it is. Sometimes you have to stop and literally taste once again that even in the darkness, God is still good.

Most recipes I’ve come across that use almond flour or almond meal include it as a substitute for a traditional flour. Sara Forte’s “Almond Meal Cookies with Coconut and Cacao Nibs” from The Sprouted Kitchen: A Tastier Take on Whole Foods is one of the first that actually celebrates almond meal. Rather than being disguised as a traditional flour, these cookies embrace the texture and nuttiness of almond meal.

My recipe below uses hers as inspiration, changing up the flavors a bit with ingredients like macadamia nuts and white chocolate.


White Chocolate + Macadamia Almond Meal Cookies (Gluten Free!)
Yields about 12-14 cookies
Adapted from The Sprouted Kitchen

1¼ cups almond meal
½ cup chopped macadamia nuts
⅓ chopped dried cherries (optional)*
¼ cup chopped white chocolate
¼ cup brown sugar, lightly packed
½ teaspoon aluminum-free baking powder
¼ teaspoon kosher salt
1 egg
3 Tablespoons coconut oil, melted
½ teaspoon vanilla extract

In a large bowl, mix together the almond meal, macadamia nuts, cherries (if using), white chocolate, brown sugar, baking powder, and salt. In a separate bowl, whisk the egg until it’s uniform in color. Whisk in the coconut oil and vanilla extract.

Add the wet ingredients into the dry ingredients. Mix just until combined. Cover and put the bowl in the refrigerator for at least 20-30 minutes.

When you’re ready to bake, preheat the oven to 375. Form the dough into balls, slightly smaller than a golf ball. Set them on a baking sheet about two inches apart. Gently press down the tops to flatten them slightly.

Bake for about 10-13 minutes, or until the edges are slightly browned. Remove from the oven and allow them to cool. Serve and enjoy!

*I made one batch with the cherries and one batch without. I honestly couldn’t decide which I preferred. The cherries add quite a bit of sweetness to the cookie, so if you want to tone down the sweetness, leave them out. But if you’ve got a sweet tooth, go ahead and add ‘em!

Sitting in my bed, I attempt to hide and drown out the noise downstairs with the rhythmic hum of my breast pump. I can still hear the baby crying and my toddler son whining. His twin sister yells at the top of her lungs for no reason, except maybe to keep up with the decibel level of everyone else. I’ve been here longer than necessary, partly because pumping takes extra time. I worry my supply is dropping, maybe due to diet changes or stress or who knows what. My mind conjures up a thousand possibilities, all of which I feel the urgent need to research.

I stop my frantic Googling as I notice my heart pounding faster. Apparently escaping to a semi-quiet room only made my anxious thoughts louder. I try to sit still as I listen to the steady hum of the pump, praying those bottles will fill with a few more drops. I’m not ready to add the chaos from downstairs to the chaos I carry in my own body.

It’s mac and cheese for dinner tonight—the one from the box, not the good homemade stuff. I can hear my husband’s footsteps bound up and down the stairs as he manages whatever is going on. He’s working hard to give me peace and quiet, but the volume can only be helped so much—especially during the witching hour.

There’s no denying it’s hard to connect. It’s hard to have the time and space to look each other in the eyes and ask, “How was your day?” and then actually answer without LEGOs being thrown across the room or a not quite potty-trained toddler peeing on the floor. How can we connect when I can’t even be in the room with the rest of the family?

Before babies, we used to get home from work and sit at the table together. I’d cook a homemade meal nearly every night. We’d talk over pasta and salad, garlic bread and a glass of wine. Now, even the most gracious attempts to talk more deeply or resolve conflict seem impossible. My husband’s words get caught in the tornado of emotions and information swirling in my mind, and I can’t seem to calm the storm. Some days that storm rages only in my head and heart; other times everyone else gets swept by its gale force winds. Feeling connected—feeling as though we’re on the same page, moving in the same direction, on the same team some days appears to be an exercise in futility. How do you connect with each other in the midst of a messy house, postpartum anxiety, sleep deprivation, carrying the burden of parenting, mom guilt, kids’ schedules, and the fact that if one more set of hands touches me, I may completely lose it?
